07 - 2 tbsp olive oil, divided
08 - 1 tsp smoked paprika
09 - 1/2 tsp ground cumin
10 - 1/2 tsp garlic powder
11 - 1/2 tsp chili powder

13 - 1/4 cup fresh cilantro, chopped

# Directions:

01 - Preheat oven to 425°F.
02 - Toss diced sweet potatoes with 1 tbsp olive oil, paprika, and a pinch of salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and tender.
03 - While sweet potatoes roast, heat 1 tbsp olive oil in a large skillet over medium heat. Add onions and bell pepper; sauté 4-5 minutes until softened.
04 - Add ground beef, cumin, garlic powder, chili powder, salt, and pepper. Cook, breaking up the meat, until browned and fully cooked, about 7 minutes. Drain excess fat if necessary.
05 - Stir in baby spinach and cook 1-2 minutes until wilted.
06 - Divide roasted sweet potatoes among four bowls. Top with beef and vegetable mixture, avocado slices, and any desired toppings (cilantro, Greek yogurt, lime wedges).
