# Expert Advice:

01 -
  • Everything cooks on one baking sheet and one skillet, so cleanup is surprisingly manageable for such a hearty meal
  • The crispy potatoes and runny eggs create this perfect texture combo that hits every craving spot
  • You can prep the toppings in advance and just assemble bowls in the morning
02 -
  • Dense potato cubes will steam instead of roast, so spread them out without overcrowding the baking sheet
  • The eggs keep cooking after you take them off the heat, so pull them earlier than you think you should
03 -
  • Soak the diced potatoes in cold water for 10 minutes before roasting to remove excess starch for extra crunch
  • Cook the bacon ahead of time and reheat it gently while you scramble the eggs
