Raspberry Cream No Bake Dessert (Printable)

Fresh raspberries meet silky vanilla cream over a crunchy cookie crust in this easy no-bake layered dessert.

# What goes in:

→ Crust

01 - 7 oz graham crackers or digestive biscuits, crushed
02 - 5.5 tbsp unsalted butter, melted

→ Cream Layer

03 - 8 oz cream cheese, softened
04 - 3/4 cup heavy cream, cold
05 - 1/3 cup powdered sugar
06 - 1 tsp vanilla extract

→ Raspberry Topping

07 - 7 oz fresh raspberries, plus extra for garnish
08 - 2 tbsp raspberry jam
09 - 1 tbsp lemon juice

# Directions:

01 - Combine crushed graham crackers with melted butter in a bowl until evenly moistened. Press firmly into the bottom of a lined 8-inch square or round pan. Refrigerate for 15 minutes to set.
02 - Beat softened cream cheese, powdered sugar, and vanilla extract in a large bowl until smooth and creamy, about 2-3 minutes.
03 - In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until fully incorporated and smooth.
04 - Spread the cream mixture evenly over the chilled crust using an offset spatula.
05 - Mash half the raspberries with raspberry jam and lemon juice in a small bowl. Gently fold in remaining whole raspberries until distributed.
06 - Spoon raspberry mixture over cream layer and spread gently. Refrigerate for at least 2 hours until completely set.
07 - Garnish with additional fresh raspberries before serving. Slice into squares or wedges and serve chilled.

# Expert Advice:

02 -
  • The chilling time is not optional or flexible, since cutting into this before its fully set results in sad, sliding layers instead of clean slices
  • A hot knife dipped in water between cuts will give you those picture perfect edges instead of ragged, dragged-through-the-cream messes
03 -
  • Run your knife under hot water and wipe it dry between every single slice for restaurant quality edges that make people think you know secrets they dont
  • Always fold berries into the topping instead of dropping them whole, since that burst of juice creates those stunning marbled swirls that look like you spent hours on presentation
