11 - 2 cloves garlic, minced
12 - 1 tbsp freshly grated ginger
13 - 1/2 tsp crushed red pepper flakes (optional, for heat)

14 - 2 tbsp cornstarch
15 - 2 tbsp cold water

→ Garnish

16 - 2 green onions, sliced
17 - 1 tbsp toasted sesame seeds (optional)

# Directions:

01 - In a medium bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, garlic, ginger, and red pepper flakes (if using).
02 - Place chicken thighs in the bottom of the slow cooker. Top with bell peppers, onion, and pineapple chunks.
03 - Pour the sauce evenly over the chicken and vegetables. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until the chicken is tender and cooked through.
04 - In a small bowl, mix cornstarch with cold water to make a smooth slurry.
05 - During the last 30 minutes of cooking, stir the cornstarch slurry into the slow cooker. Mix gently to combine and let the sauce thicken with the lid off for the final 30 minutes.
